How is a 1:1 transformer used in order to eliminate/filter overtones? Do you have any examples to that? in small and in big scale.

A 1 to 1 transformer is used to provide a separate grounding reference between two halves of a circuit. In audio, if there is any noise from grounding, it will be removed as signal passes through induction.. The windings are electrically independent.

In addition to cases that Bill said, a 1:1 transformer is used for protection against electric shock.

In a three-phase application you can isolate certain harmonics (in particular the third harmonic), by a Dyn coupled transformer. This has in certain cases been used in connection with supplies for plant control and SCADA systems.
